Parmesan Roasted Asparagus

This asparagus recipe is by far the easiest, most delicious, and healthiest side you can make. My kiddos call them green French Fries and devour them by the handful. Asparagus is a great way to get your vitamin K and folic acid. Eating asparagus also supports heart health and healthy digestion. Parmesan Roasted Asparagus is super simple to make and only requires three ingredients.

Ingredients:

Fresh asparagus
Fresh parmesan (freshly grated)
Extra virgin olive oil

Instructions:

Take the fresh asparagus and break or cut off the bottom, woody portion of the stem. Toss with olive oil and place on baking sheet. Spread asparagus uniformly in even layer on baking sheet. Grate about 1/2 cup of fresh parmesan on top of the asparagus. Add salt and pepper to taste. Bake at 400F for about 15-20 minutes. If you eat them with your fingers (like my kiddos do), allow them to cool before serving. Serve with your favorite steak - yum!
