The Best Mac N Cheese on the Planet

The kiddos would eat it every single night of the week if we let them. While I actually am a fan of the boxed mac n cheese, my kids could literally eat a box each. Sometimes I prefer to make a batch of homemade. It's great for lunches, dinners, parties, snacks. Like I said, we eat a lot of mac n cheese at our house. This recipe is by-far my favorite. It's creamy. It's easy to make. It's very adaptable depending on whatever melty cheese you have available. And the kids love it. Ingredients: 1 16 oz. box of pasta (Elbows, bow ties, penne, or your favorite pasta) 1 12 oz. can of evaporated milk (THE secret weapon for creaminess) 2 16 oz. blocks (or bags) of shredded cheese (I love cheddar here, but any cheese that melts works well. Although we go out infrequently, when we enjoy a nice evening at a restaurant, I am always drawn to the cheese plate. The descriptions are always fascinating combinations of flavors, and I love the idea of trying something new. Unfortunately, most cheese plates at high-end (or even low-end) restaurants can set you back a pretty penny. You also don't often get a lot for your money. My suggestion - do it yourself - recreate your own high-end cheese plate at home. It's not hard. It's not that expensive if you limit your portions. And with little work, it's a great option for parties and entertaining, where everyone can create their own elegant flavor blends. The Board It all starts with a good sized cutting board. You can lay out all of your cheese and other accoutrements. Offer a few knives and everyone can select, cut, and sample the items of their choosing. I
