The Best Mac N Cheese on the Planet

Macaroni and cheese is king in our house. The kiddos would eat it every single night of the week if we let them. While I actually am a fan of the boxed mac n cheese, my kids could literally eat a box each. Sometimes I prefer to make a batch of homemade. It's great for lunches, dinners, parties, snacks. Like I said, we eat a lot of mac n cheese at our house. This recipe is by-far my favorite. It's creamy. It's easy to make. It's very adaptable depending on whatever melty cheese you have available. And the kids love it.

Ingredients:

1 16 oz. box of pasta (Elbows, bow ties, penne, or your favorite pasta)
1 12 oz. can of evaporated milk (THE secret weapon for creaminess)
2 16 oz. blocks (or bags) of shredded cheese (I love cheddar here, but any cheese that melts works well. I have combine cheddar with mozzarella. Also, check out my post describing how I save money on shredded cheese.)
Salt/pepper/garlic powder to taste

Instructions:

In a large pot, cook the pasta according to the package instructions. Drain and return cooked pasta to the pot. While the pasta is still warm add shredded cheese and evaporated milk. Stir constantly until the cheese is melted. If needed, turn the burner on low and continue stirring until cheese and milk are completely incorporated. Add seasoning to taste. Serve like this or add to a casserole dish and top with bread crumbs or croutons for a party favorite. Sit back and watch it disappear.
